Callebaut 811 is a great quality dark chocolate for chocolate strawberries.
I use these callets as part of my 50/50 method, mixing them with compound chocolate to make dipping easier while still getting that beautiful couverture chocolate flavour.
You can also use them on their own, but remember — if you're using them by themselves, you'll need to temper the chocolate properly.
They're not cheap, but in my opinion they're worth it. The flavour, along with the extra fluidity you get from the cocoa butter, can really help take your chocolate strawberries to the next level.
Great for dipping, drizzling and decorating.
